Anders' Favourite Smørrebrød Recipes

Sildemad - Herring Sandwich

  • dark rye bread
  • herring that has been pickled in vinegar with whole peppercorns
  • sliced onions
  • half a hard boiled egg
  • mayonnaise
  • lots of pepper and dill
Shooting Star
  • dark rye bread
  • plaice that has been dipped in raw eggs, turned once or twice in breadcrumbs and fried in a pan and chilled
  • lemon slices
  • danish remoulade

Another thing you might find interesting is that the sandwiches here mentioned are feast sandwiches, usually consumed at parties or in restaurants. At home everyone eats them, but with a lot less stuff on such as the one below that my mother likes to eat:

  • dark rye bread
  • two slices of potato
  • mayonnaise
  • purløg (crisp fried onion)
Since the above sandwiches are starters, you usually drink Gammel Dansk (our strong spicy liquor, possibly exported as Old Danish) with them, and then turn to beer, once you switch to the other sandwiches. Every meal has at least 4 or 5 toasts in Gammel Dansk (at least at my grandmothers) and although not many people bother anymore, the correct way to serve it is of course in a frozen shot-glass, so it is ice-cold but without ice (usually people keep the Old Danish in the freezer as well).
