Karelian Cheese Torte - "Rahkatorttu"

I first tried this delicious pie when I was in Finland and I struggled to find a recipe for it when I returned to Canada. Thankfully a few members of the Society dug this one up for me about 3 years ago. You can get "quark", a type of fresh cheese, in most stores but if you cannot find it, simply use the same amount of cottage cheese and whip it in a bowl with an electric mixer until creamy.

For the crust:

  • 1/2 cup of butter or margarine, softened
  • 1 egg
  • 1 tsp baking powder
  • 2 cups of all purpose flour
  • 1 Tbsp of honey
For the filling:
  • 1 cup (250 g) of quark
  • 100 ml cream
  • 1 egg
  • 2 Tbsp of honey
  • 2 Tbsp of lemon juice
  • 1/2 cup of raisins

Preheat an oven to 400°F. To make the crust, mix the softened butter or margarine with the egg and honey. Sift together the flour and the baking powder and add this to the butter mixture. Press the dough into the bottom and sides of a greased 9" round baking dish. For the filling, mix all of the ingredients together and pour this mixture on top of the dough. Bake the pie for about 30 minutes. Let cool.
